Crispy Fluffy Sourdough Waffles

So I am a bartender and trust me, the late nights talking to very drunk people can get very emotionally draining. Not only is it mentally taxing, but it's hard physical work! You know what gets me through that late-night shift? Looking forward to my sourdough waffles the next day, GOOD LORD. There's nothing else on earth that could possibly hit the spot the way these boys do. I mean..... I'll let the jury decide.



So in order to get these puppies going, your gonna to need to get a sourdough starter brewing. This will take you approximately 7 days, assuming you are competent enough to remember to feed it at least once per day. BUT DON'T WORRY. Once you get a starter going, you'll literally never have to wait 7 days AGAIN.


So yea cool. Starter is literally just flour + water, and you just add more flour + water 24 hours later. Repeat this on days 1-7 to get that bacterial party going. We're intentionally inducing a yeast infection. Scratch the Vagasil. Don't forget to throw some out before you add fresh, or else your jar will overflow like Mt. St. Helens. If you are at all confused by this, you should be. Sourdough starter makes no sense at all until it does. I'll do a tutorial on it when I feel like it and it will be linked HERE.


So when I wake up in the morning and have these puppies, with some fresh fruit for fiber. And a piping hot cup of coffee, it provides meaning to an otherwise ponderous and capricious existence. And I can stop asking myself questions like "What am I doing with my life?" "Why are we here?" and "Is time linear or circular?" and start asking myself questions like "How do these taste so good?" "How am I such a baking genius?" "How did I pull off such an insane tasting meal?"

Waffle Iron Handeling

FLIP YOUR IRON. Right once the batter is added, flip it over then after a couple of seconds flip it back. This ensures both sides cook up nice and fluffy.

For The Best Flavor

I use Madagascar Vanilla Bean Bourbon Paste and Pumpkin Pie Spice. If you want to get a little crazy, adding an artificial sweetener such as Stevia or Monk Fruit to the batter definitely gives it an extra UMPH!

Pro Tip

Never wash your waffle iron. I know this is gross, but it prevents the batter from sticking. I have ruined two irons trying to be cleanly before figuring this out.

Warm your milk (I use almond) in the microwave for 15 seconds. Measure out your starter ~110 g into a bowl and whisk into milk with sugar. Add yogurt then flour. Cover overnight with towel.

The next day, chop the butter up and melt in the microwave. Add vanilla bean paste, egg, baking soda, cinnamon or pumpkin spice, whisk until smooth.

Preheat waffle iron and let batter sit for 5-10 minutes until baking soda allows to rise. While this is happening, prepare your morning coffee and toppings.

Place batter onto iron and immediately flip so both sides cook. Flip iron after ~90 seconds on each side.

1/2 cup Greek Yogurt

1/2 Cup Milk of Choice

1/2 cup Active Sourdough Starter

1 Tbsp Granulated Sugar

1 Cup All-Purpose Flour

Sourdough Overnight Sponge

1 Egg

1/4 Cup Butter

1 Tsp Vanilla Bean Paste

1/2 Tsp Fine Kosher Salt

3/4 Tsp Baking Soda

1/2 tsp Pumpkin Pie Spice or Cinnamon

Batter

Fresh Fruit

Butter

Powdered Sugar
